Products of the domain : Giboulot Jean Michel


With five first growths, the area currently in conversion to organic farming, offers a beautiful representation of the Savigny appellation, Côte de Beaune.
In his stronghold of Savigny-lès-Beaune, domain Jean-Michel Giboulot, existing since 1935, produces a majority of wine of the appellation, including five premiers Crus: Aux Fournaux, Aux Gravains, Les Peuillets, Aux Narbantons and Aux Serpentières. He also works vines in the villages of Pommard and Beaune.
Since 2010,the vineyard is in conversion to organic farming. The Ground maintenance is done mechanically with plowing and hoeing. The steepest slopes are grassed.
The red wine vinification takes place in oak barrels after fermentation for 10 to 20 days. The Livestock duration varies from 10 to 12 months. Whites remain in their tanks up to 10 months to preserve freshness of aromas.
