A beautiful representation of Burgundy.
With almost 28 hectares of vineyards spread from Chambolle-Musigny to Mercurey, the domain offers a large choice of appellations.
Such as in a large number of Burgundy domaine, the work is done by the family.
François Delaby manages the domain with his daughter Aude and his son-in-law Guillaume Lavollée.
They farm a domain of 27,5 hectares on the Nuits coast, Beaune coast, Chalonnaise coast with in particular around 10 hectares in the Mercurey appellation.
In the vineyard, biodynamic tests are being conducted. Everything is done to let the soil speak and harvest the healthiest and qualitative grapes. Green harvesting may be performed if necessary and the grapes are harvested by hand.
In the cellar, the wines are aged between 12 and 18 months in barrels, with 20 to 40% in new oak to maintain the purity of the flavors.
